Haccoba Shuzo
In Japan, there is currently a renaissance of "craft sake" and Haccoba, made by Taisuke Sato in Fukushima, is one of the leading brands in this exciting new category. Simply, craft sake is a category for sakes that are not legally classified as Nihonshu because they are made through methods that are not legally recognized or made with non-traditional ingredients such as hops, botanicals or other ingredients not used in traditional sake making. Because current laws in Japan restrict the number of new sake brewers, but do not put the same restriction on craft sake brewers, it is a rapidly growing new category and Haccoba is leading the way.
